When iOS simulators suddenly disappear or are accidentally deleted, you can reset to a clean state with these commands. After execution, Xcode will create new simulator devices as needed.
# Close Xcode, Simulator, and Instruments first
sudo killall -9 com.apple.CoreSimulator.CoreSimulatorService
rm -rf ~/Library/*/CoreSimulator
